    My love for egg drop soup runs deep. So does my love for bacon. Whose doesn’t, amirite? When I first discovered this bacon egg drop soup recipe from mynameisyeh, I was over the moon excited! Two of my favorite things united as one. Huzzah! Molly, you’re a goddamn genius. It’s people like you who make the world a better place.

    The spices and bacon meld together to create a depth of flavor that is truly unbelievable. The best part though? It’s incredibly easy to prepare… like Top Ramen easy. I remember the first time I whipped this up for hubs and my MIL, they assumed I had poured hours into gingerly doting on a simmering pot all day long. Jokes on them! In less than 30 minutes you can have homemade egg drop soup on the table.

    I guarantee that it’s better than any egg drop soup you’ll pick up at a restaurant. Why? Because bacon.

    I’m usually a meatza girl when it comes to satisfying my pizza cravings, but people rave about fathead pizza. I was beginning to wonder if it truly lived up to the hype, so I finally tried it. Oh boy, am I glad I did! It’s like… real pizza. With a bready crust and everything. Seriously, if I ordered a pizza and this was delivered to me, I don’t think I would have even questioned it. Keto meatza is fantastic, but sometimes you just want bready goodness, ya know?

    The crust is the superstar of the recipe. Once I realized how great the ingredients worked as a pizza dough, I immediately started thinking of different ways I could incorporate it into my cooking. Then pizza rolls came to mind!

    If you love pizza rolls, I guarantee you will want to hang on to this recipe. Not only are these a healthy replacement for the frozen variety you’d find at your grocery store, but they also taste at least 10 MILLION times better. I repeat, 10 MILLION times better.

    Even my partner, a recovering pizza roll addict, admits that these are way better.

    I’m hoping to replace this (absurdly frequent) conversation:

    Me: “Want anything from the store?”
    Him: “Pizza rolls.”

    Me: “Omg. MORE?! Why? How?”

    With this conversation:

    Me: “Want anything from the store?”
    Him: “I don’t care what you get. But if you make fathead pizza rolls tonight, I’ll do the dishes for all eternity.”

    I utilized the same ingredients for the crust as the original fathead pizza. They are simple and easily accessible: almond flour, shredded mozzarella, egg, cream cheese and a small sprinkle of garlic salt.

    Melt the two types of cheese in the microwave or an oven-safe dish and mix. This process will only take about a minute in the microwave but will take little longer if using your oven. Drape a cookie sheet with parchment paper and sprinkle a tiny amount of almond flour and garlic salt onto the surface. The parchment paper is key to getting the dough to lift off the cooking surface once you are ready to roll it, so don’t skip out on it!

    Once the mozzarella and cream cheese is nice and gooey, stir it together with your almond flour and egg. Try to work quickly to avoid the cheese from hardening. If it does harden, you can briefly throw it back in the microwave or oven to soften it up. Don’t leave it in too long or it will start to cook the dough, and you won’t be able to spread it thinly.

    Place your fathead pizza dough onto the parchment paper and spread it into a thin rectangular shape. You can use your fingertips or a rolling pin to smooth it out. If you go the rolling pin route, I would suggest using an additional sheet of parchment paper on top since it tends to get a bit sticky.

    Once you’ve got a nice thin layer of dough, poke some holes throughout and pop it into a preheated oven at 400 degrees F for about 2-3 minutes. The dough should be slightly hardened, but not thoroughly cooked, for ease of rolling.

    Remove the partially baked dough from the oven. Use a knife or spatula to separate the edges from the parchment paper, and then add your toppings. I used tomato sauce, shredded mozzarella, pepperoni, salami, and black olives.     Now it’s time to roll! Start by gently folding one edge in on itself and continue rolling up into a little pizza log. You can decide to roll from a short side or a long side, both ways are equally delicious! I started from a shorter edge to get a thick spiral, but you could roll length-wise instead to get skinnier rolls. The choice is yours!

    Take a sharp knife and slice your log into slices, as thick or as thin as you like. I made mine a little over 1 inch thick. Lay the slices flat and throw them back into the oven for 10-15 minutes, until your dough bakes to a golden crisp.

    Ingredients

    The Dough

    • 1.5 cups Low Moisture Mozzarella Cheese Shredded
    • 2 tbsp Cream Cheese
    • ¾ cup Almond Flour
    • 1 Egg
    • ½ tsp Garlic Powder

    The Filling

    • 2 tbsp Rao's Marinara Sauce
    • Mozzarella Cheese Shredded, to taste
    • Black Olives Minced, to taste
    • Pepperoni Minced, to taste
    • Salami Minced, to taste
    US Customary - Metric

    Instructions

    • Preheat oven to 400 degrees F.
    • Drape cookie sheet with parchment paper. Sprinkle garlic salt and a small amount of almond flour on the surface of the paper.
    • Melt the mozzarella and cream cheese in the microwave for 60 seconds.
    • Stir almond flour and egg in with the melted cheese mixture to form the dough.
    • Flatten the dough out into a rectangular shape on the prepared parchment paper.
    • Bake the dough for 3 minutes at 400 degrees F.
    • Remove from oven and lift edges of dough from parchment paper.
    • Spread tomato sauce across the surface of the crust. Evenly distribute the rest of the pizza toppings over the sauce.
    • Starting with one edge of the crust, gently roll into a log.
    • Using a sharp knife, cut into slices.
    • Lay slices flat on top of parchment paper covered cookie sheet.
    • Bake for 10-15 minutes, until dough becomes golden.

    Ah, protein waffles. This recipe has taken me so many times to get just right. Tons of different recipes and revisions ended in disappointment. I was beginning to think these just wouldn’t work. It wasn’t until I added coconut flour that it turned out perfect! The texture, the taste, and the macros were all on point! At last, the perfect chocolaty, low carb waffle was born!

    The addition of the coconut flour transformed the typical protein waffle or pancake from dry and brittle to a bready delight. If I hadn’t made them myself, I would have thought they originated from dough instead of a batter based off of the consistency.

    The Chocolate Protein Waffles Recipe

    The base of the recipe consists of low carb chocolate protein powder, coconut flour, egg, and baking powder. I like to use the creamy chocolate fudge flavor of Orgain brand protein powder for several reasons. It’s super low in carbs (3g net per serving), it tastes great, isn’t gritty, it’s organic, and they sell it at Costco. I love Costco and bulk shopping, so… I have a lot of this stuff! 🙂 Just be sure that whatever protein powder you decide to use, it’s low in carbs.

    Update: Since initially writing this, I have completely fallen in love with Quest protein powders, and the chocolate milkshake flavor is to die for. Pretty much all of their flavors are on point, so if you're looking for something ah-mazing, you should probably try one of the Quest proteins. They're so good... and only 2 grams net carbs per scoop!

Slowly add water to your mixture until you reach the consistency of a thick pancake batter. Spread the batter onto a hot, greased waffle iron and cook until they crisp up.

    It's entirely optional, but if you find the batter a bit dry or thick, you can add a teaspoon of melted coconut oil to the mix before cooking. This will add a little extra fat and calories but will moisten it up a bit.

    Top the chocolate protein waffles with whatever low carb goodies your heart desires. I’ve never been big on syrup, so I usually smother my waffles and pancakes in butter. But these would make perfect dessert waffles with a bit of heavy whipped cream and berries. Yum!

    • 1 scoop Low carb chocolate protein powder
    • 1 Teaspoon Coconut Flour
    • 1 Teaspoon Baking Powder
    • 1 egg
    • 2-3 Tablespoons Water

    Instructions

    • Preheat waffle iron.
    • Combine protein powder, coconut flour, baking powder, and egg.
    • Use hand mixer or whisk to blend until the dry ingredients become wet.
    • Add water, one tablespoon at a time until the mixture becomes the consistency of a thick pancake batter.
    • Grease waffle iron with oil to prepare for batter.
    • Spoon batter onto hot iron.

    Alice Springs Chicken is an Outback Steakhouse classic. It’s a grilled chicken breast topped with sautéed mushrooms, crisp bacon, melted cheese and honey mustard sauce. This is one of those tricky dishes that you may order, assuming it is low carb. Meat, mushrooms, and bacon… how bad could that possibly be?

    Unfortunately, there’s a whopping 15 grams of net carbs in the chicken dish according to Outback’s nutrition facts! That honey mustard glaze is packed full of sugar and can really sneak up on a low carber. Also, it’s $17 for one serving. Ouch!

    Thankfully, Linda of genaw.com has you covered! Her low carb version of Alice Springs Chicken recipe is just as good (if not better!) as the Outback Steakhouse dish and has only 2 grams of net carbs! Her recipe is also budget friendly; I was able to feed my entire family and had leftovers (hubs, MIL, two kids, and myself) for under the cost of one serving at Outback. Heyooo!

    It’s a breeze to fix and reheats well too if you’re the batch cooking type when it comes to meal planning. I used a spicy creole seasoning for the chicken, threw the bacon on a large griddle surface to fry and cooked the mushrooms in the remaining bacon fat with some garlic and butter.
