    Keto Zucchini Bread with Almond Flour [Gluten-Free]

    Craving zucchini bread but not all the carbs? This recipe is for you! Our keto zucchini bread with almond flour is LCHF: low carb, high flavor. ?It’s also sugar and gluten-free!

    Keto Zucchini Bread

    Traditional zucchini bread is not exactly keto-friendly. Sure, maybe a little nibble of the sugar-laden treat could fit into your keto macros, but a full serving would likely push the limit if your goal is ketosis.

    Zucchini bread typically contains your standard wheat-based flour and white sugar, which are both high carbohydrate ingredients. 

    Ketosis relies on carb restriction, so we need to choose alternative ingredients to make keto zucchini bread. We can omit sugar entirely or replace it with a low-glycemic, keto-friendly sweetener, such as erythritol, monk fruit, or stevia.

    Which flour has lowest carbs?

    Due to their nutrient composition, finely ground nuts often make the best low carb flours. Many nuts have a high fiber content, which effectively lowers the carb count that directly impacts ketosis and metabolism. 

    Instead of wheat flour, a low carb flour can be substituted. We’ve used finely ground, blanched almond flour in this recipe. It is low in net carbs due to the fiber, bakes beautifully, and is a great gluten-free alternative. It’s one of the most popular keto flours to bake with!

    How many carbs are in almond flour?

    Almond flour is finely ground up almonds. That's it! In fact, you can make your own with the help of a food processor. In 100 grams of blanched almonds, there are 18.67g total carbs, 9.9g fiber, and 8.77g net carbs.

    Most serving sizes for almond flour list a serving size as approximately ¼ cup, 28g, or 1 oz. In this amount of blanched almonds by weight, there are 5.29g total carbs, 2.8g fiber, and 2.49g net carbs per serving. 

    According to the nutrition label on one of the almond flour brands we frequently bake with, there are 5g total carbs, 3g fiber, and 2g net carbs per ¼ cup (or 28g).

    Wheat flour contains 70 net carbs per 100 grams! Comparing the two types of flours, you can see how dramatically almond flour reduces the carb load in our recipe. 

    The other ingredients normally found in zucchini bread are all relatively low in carbs. No more swaps are required, simply adjusting for taste, flavor, and texture.

    Is zucchini good for keto?

    Yes! Zucchini is great for keto. At just 2 net carbs and 95 calories per 100 grams, zucchini is great for low carb diets and weight loss alike. It also has a decent amount of potassium, which is great for dialing in imbalanced electrolytes responsible for the keto flu.

    Carbs in Keto Zucchini Bread

    In the full keto zucchini bread recipe, there are 51.8g total carbs, 27.2g fiber, and 24.64g net carbs. How thinly you slice your loaf of bread will give you an accurate carb count per slice.

    We typically cut the loaf into 10 pieces, yielding 5.2g total carbs, 2.7g fiber, and just 2.46g net carbs per slice.

    How to Make Zucchini Bread with Almond Flour

    In baking, it’s standard to keep wet and dry ingredients separate until combining the batter. Use two separate bowls to mix wet and dry, respectively. 

    Wet ingredients include: oil, eggs, and vanilla extract. Plus optional sweetener, if using any. Dry ingredients include: almond flour, sea salt, baking soda, and cinnamon. 

    Combine the two separate mixtures in one bowl, stirring the dry ingredients into the wet for best results.

    At this point, the zucchini and any optional extra mix-ins can be added--Lily’s dark chocolate baking chips, walnuts, etc. 

    To prepare the zucchini for the recipe, it needs to be shredded. Then, remove the excess moisture.

    How do you grate zucchini for cake or bread?

    To shred zucchini, a variety of kitchen tools can be used. A standard cheese grater will do the job. A mandolin with a grater attachment would also work well. However, a food processor with the grater attachment will provide the fastest results. 

    After shredding the zucchini, compact it into your hands and squeeze to remove excess water before combining it into the batter. Skipping this step may result in a watery batter and change the final product.

    Bake in small loaf pans lined with parchment paper at 350 degrees Fahrenheit for approximately 50 to 60 minutes, or until a toothpick inserted in the center comes out clean. Be sure to give the bread ample time to cool before slicing.

    Zucchini Bread with Coconut Flour

    Coconut flour may also be used to make keto-friendly zucchini bread, but it will not swap out evenly with almond flour. Coconut flour is much more absorbent, requiring a smaller amount of flour and more moisture overall. 

    If testing the recipe with coconut flour, try decreasing the coconut flour and increasing the eggs. We’d recommend starting with about ¼ cup of coconut flour and 3 to 4 eggs, then tweaking for texture, consistency, and taste as needed.

    How to Store Almond Flour Zucchini Bread

    Keto zucchini bread can be stored at room temperature, in the fridge, and even frozen. 

    Room temp storage: Cover bread with plastic wrap or place in an airtight container for up to 14 days.

    Fridge storage: Place in an airtight container for up to 1 month.

    Freezer storage: Place in an airtight, freezer-safe container for up to 6 months. You can freeze whole loaves or individual slices to thaw later, whatever you prefer. Individual slices are perfect for portion control and make the recipe last a bit longer. A whole loaf of homemade zucchini bread sitting out on the counter tends to disappear quickly!

    To thaw the bread: Individual servings can be thawed directly in the microwave in 30-second bursts until it’s heated to your liking. Whole loaves will need to be thawed in the fridge, then briefly reheated in the microwave or oven to refresh the zucchini bread. Note: the zucchini bread must be removed from its container prior to thawing and reheating.

    Tools to Make Low Carb Zucchini Bread

    Mini Loaf Pans – This recipe works best with small, shallow bread loaf pans like the ones featured in the link. Whether using larger or smaller pans (i.e., muffins), be sure to adjust the bake time and test the doneness accordingly.

    Food Processor - Not 100% necessary to shred the zucchini, but if you have one handy it shaves the process from several minutes down to seconds. One of the most used tools in the Ketogasm test kitchen!

    Specialty Ingredients Needed

    Blanched Almond Flour - Finely ground, blanched almond flour is the preferred almond flour for baking. Almond meal is not the same thing, it’s a bit chunkier and still has the skin on. When baking, super-fine blanched almond flour > almond meal.

    Monkfruit Erythritol Sweetener Blend – If using a keto sweetener, consider a monk fruit erythritol blend. Because it is low in carbs, glycemic index, and calories, this blend doesn’t impact ketosis or blood sugar levels.

    Ingredients

    • 2 cups almond flour blanched
    • ½ tsp sea salt finely ground
    • ½ tsp baking soda
    • 1 tsp cinnamon ground
    • ¼ cup avocado oil or extra virgin olive oil
    • 1 tbsp monkfruit or erythritol sweetener or sweetener of choice, optional
    • 2 eggs large
    • 1 tsp vanilla extract
    • 1 cup zucchini grated, moisture squeezed out
    • ½ cup Lily's dark chocolate baking chips optional

    Instructions

    • Preheat oven to 350 degrees F and line a small, shallow loaf pan (7.5 x 3.5-inch) with parchment paper.
    • Combine the following ingredients in a mixing bowl: almond flour, sea salt, baking soda, and cinnamon.
    • In a separate mixing bowl, whisk together oil, sweetener, eggs, and vanilla extract.
    • Combine the two mixtures, mixing the dry ingredients into the wet.
    • Mix in zucchini and optional dark chocolate baking chips.
    • Transfer batter to loaf pan and bake for approximately 50 to 60 minutes, or until it passes the clean toothpick test.
    • Allow keto zucchini bread to cool before slicing.
