In a large bowl, mix rosemary, thyme, curry powder, chives, fennel seeds, cumin, salt and ½ of the olive oil.
Rub the pork chops with the spice mix to evenly coat the meat.
Pour the remaining olive oil into the crockpot. Add the meat to the slow-cooker, cover, and cook for 4 hours on high, 6 hours on medium, or 8 hours on low.
