KETO STUFFED BELL PEPPERS

This classic Italian-style stuffed peppers recipe has perfectly seasoned meat, melty cheese, and only 6 net carbs!
Cut the tops off of the bell peppers, then scoop out the seeds and ribs.
Place peppers in a microwave-safe dish. Fill bottom of dish with water, then microwave for 5-6 minutes.
Cook ground beef in skillet over medium heat until no longer pink. Break into small pieces as it cooks. Discard excess fat.
Add onions and garlic. Cook until softened and fragrant.
Add tomato paste, Italian seasoning, pepper, and salt to pan.
Pour in water, mix well, and bring to a boil. Reduce to a simmer until liquid cooks off.
Add cauliflower rice to meat mixture. Once it has cooled, mix in cheese cubes.
Fill each bell pepper with the meat and cheese mixture.
Bake at 425 F for 30 to 40 minutes, until peppers become tender.
