Broccoli & goat cheese is a killer combination. I first discovered the flavor pairing as I was working diligently to use up a Costco-sized stock of goat cheese in my refrigerator. After popping a sheet pan of broccoli in the oven, I decided to top it with a bit of goat cheese while it was roasting. The result? So. Damn. Good.
The goat cheese melts into a creamy, tart and tangy topping that pairs beautifully with the broccoli. If funky cheeses are pleasing to your palate, you are going to love this recipe.
It's an earthy combo, but not overpoweringly so. My toddler, who will not eat broccoli or goat cheese when presented exclusively, devoured this soup without hesitation. This all leads me to believe the broccoli & goat cheese pairing is universally delicious; my son is as picky as they come. His approving response of "good mom," followed by continuous slurping has really sealed the deal on this matter.
The Broccoli & Goat Cheese Soup Recipe
If you're a long time reader, then you already know that I love easy food just as much as I love delicious food. My happy zone is when you can enjoy an uncomplicated meal without sacrificing flavor. This broccoli & goat cheese recipe is the perfect marriage of simple and tasty.
Bring a mixture of chicken broth, heavy cream, broccoli, and goat cheese to a boil, then drop it down to a simmer. Add in salt, then blend it. You can use an immersion blender if you prefer a handheld device with minimal cleanup, or a traditional blender if you like to make the machine do all the work for you. Either way, be careful blending the hot soup; it's... hot.
Once it's thoroughly blended, I like to do a quick taste test to see if more salt is needed. I'd recommend you do the same, especially since the saltiness of the broth varies brand to brand. Garnish the broccoli & goat cheese soup with chopped almonds, then serve it up nice and warm.

Ingredients
- 3 cups chicken broth
- ½ cup heavy cream
- 8 oz broccoli florets
- 10 oz goat cheese
- 1 tsp salt
- ¼ cup almonds chopped
Instructions
- In a large stockpot, combine chicken broth, heavy cream, broccoli florets, and goat cheese. Bring mixture to a boil, then drop to a simmer for 10 to 15 minutes.
- Stir in salt then remove from heat. Carefully transfer soup to a blender, or use a handheld immersion blender, and blend the soup. Add additional salt to taste as needed.
- Transfer to bowls and serve warm. Garnish with chopped almonds.
